Winemaking

Maceration cold pre. Soft pressing and temperature controlled fermentation. Partial malolactic fermentation. Aged in stainless steel for three months and then rest in the bottle.

Organoleptic description

Yellow background of white paper, fresh acidity, mineral taste of flint, clear notes and persistent plum jam.

Notes

The label is a ceramic of a votive chapel in 1600 representing the souls of the damned, in a small niche under Mount Taburno.
